Ever since he arrived here last August, Mr. Locke?s image as a ?regular guy? has won widespread admiration from Chinese bloggers and, it seems, irked the authorities.

The way he tried to get a discount at Starbucks with a coupon en route to Beijing, and carried his own backpack, is the polar opposite of the way aloof and pampered Chinese officials behave. So when Chinese citizens praise him, by implication they are criticizing their own leaders.

Lashing out at the US ambassador earlier this month for his role in protecting blind legal activist Chen Guangcheng, the Beijing Daily published a strongly worded criticism of his ?little tricks.?

But readers? reactions to the editorial were so negative that within hours ?Beijing Daily? was a banned search word on the Chinese Internet, effectively closing down social media debate on the article.

That setback does not appear to have chastened Beijing Daily, however, and today the paper put its foot in it again.

Editors used the daily?s account on Sina Weibo, a Twitter-like platform, to post a snide request, responding to another post about Locke?s wealth.

?Will Gary Locke please disclose his personal assets?? it asked.

The question was, perhaps, conceived as a sideways commentary on the lively debate currently underway in China about the need for top officials here ? often accused of corruption ? to disclose their wealth.

But of course, the editors simply revealed their ignorance. As scornful readers quickly informed them, Locke HAS disclosed his personal assets, just like every other member of the US government. (According to his 2010 declaration, he is worth between $1,356,025 and $7,615,999, which makes him the sixth richest person in the executive branch.)

?Of course Gary Locke?s personal assets have been disclosed,? read one comment on the Beijing Daily post. ?And what about the assets of those imperial officials [of ours]?

Within hours, Beijing Daily?s original post and all comments on it had been deleted from Sina Weibo, according to David Bandurski of Hong Kong University?s China Media Project, who tracked the incident in real time.

When it came to a largely non-existent iOS feature at the moment -- Facebook integration -- Cook said to "stay tuned," noting that he has "great respect for them," and that he wants Facebook's hundreds of millions of customers to have "the best experience" on the iPhone and iPad.

The science of why you love coffee ? Living ? Bangor Daily News ...

A generation ago, most Americans recognized two kinds of coffee: regular and decaf. Now we?re concerned about every last detail ? from the beans? country of origin and whether they are organic, have been shade-grown and traded fairly to the degree of roasting and how much pressure was applied during brewing. Yet for all of this connoisseurism, how much do we understand about the science of coffee?

?Coffee?s main attributes are bitterness, acidity and body, also known as mouth-feel,? according to Ronald Pegg, a food science professor at the University of Georgia who teaches an introductory course on coffee. ?The key is to get these three attributes in balance.?

As coffee makes its way from tree to mug, producers must keep this balance in mind. It?s not an easy task, because coffee contains more than 1,000 chemical compounds, according to research by Thomas Hofmann of the Technical University of Munich and Oliver Frank of the University of Muenster.

Consider the first element, the bean. There are 70 species of coffee, but two dominate the market: coffea arabica, the more common variety native to Ethiopia, and coffea canephora, also known as coffea robusta, a more disease-resistant plant. Arabica is almost universally acknowledged as the superior variety, although blends often contain robusta because it?s cheaper and adds a strong bitterness that some coffee drinkers enjoy in small doses.

There are several chemical differences between the two varieties. Arabica has 60 percent more fat than robusta ? and taste-testers typically favor coffee made from beans with more fat. Fat also helps during the production process because it creates a more even roast. Arabica beans also have a higher concentration of sugar.

To understand why a sugary bean makes a better brew, we have to consider roasting.

Freshly picked coffee beans have virtually no flavor. Roasting is what makes coffee palatable. The roasting process triggers a long list of chemical reactions. One is caramelization, the breaking-down of sugar, which contributes to coffee?s brown color. Roasting also creates compounds that contribute to coffee?s unique flavor and aroma, including diacetyl, which adds a butterscotch flavor, and furans, which contribute a nutlike taste.

Roasting also generates what are known as Maillard reactions. Named after the French chemist Louis Camille Maillard, these complex reactions occur when heat is applied to amino acids in the presence of sugars. Like caramelization, they are responsible for browning and for the production of hundreds of chemicals that, in combination, give unique flavors to cooked meats, baked breads, dark beers, toast and coffee. Since arabica beans have about twice as much sugar as the robusta variety, the roasting process generates a fuller and more complex variety of Maillard reactions in them than it does in robusta, making for a more interesting taste in the coffee.

Roasting is a touchy business, though. High heat can also overproduce bitter compounds and ruin the drink. For many years, food scientists believed that caffeine was the main source of bitterness in coffee. While it?s true that pure caffeine has a bitter flavor, it?s present in such low proportions in an average cup of coffee that it contributes only a small amount of flavor.

In fact, coffee bitterness is attributable to a family of chemicals known as chlorogenic acids, which are also present in tea, peaches and prunes. Chlorogenic acids aren?t bitter themselves, but, when roasted, they transform into two related chemicals ? lactones and phenylindanes. Lactones give a pleasant, soft bitterness. Phenylindanes are more powerful and harsh, and are present in higher concentration in dark roasts.

Getting the roast right is still more art than science. Expert coffee roasters must constantly pull sample beans out from the heat to check the color and aroma. These markers are actually proxies for the concentration of lactones and phenylindanes. Food scientists are working on ways to make the process more scientific. One day, perhaps, instead of asking your barista for medium roast or dark roast, you?ll ask for a precise balance of lactones and phenylindanes. (And you thought coffee orders couldn?t get any more complicated.)

Just as there is science to bean selection and roasting, there?s also a little bit of science in brewing and drinking coffee.

How much of the coffee ends up in the cup depends on the brewing method chosen. Percolators and drip machines are extremely inefficient at transferring chemicals from bean to beverage. The final result is only about 1.3 percent coffee; the rest is water. That?s okay if you like a coffee with mild flavor and body, but many find that extraction rate rather weak. French-press (or plunger pot) coffee is similarly mild, but it is high in oil content, providing a body that some drinkers prefer. (French-press enthusiasts should be advised that those oils may elevate cholesterol levels.) On the other end of the spectrum are espresso machines, which force the coffee compounds into the water. Espresso is more than 5 percent coffee bean. These differences affect not only flavor but also the perception of body and mouth-feel.

No matter which brewing method you select, drink your joe immediately. As hot coffee sits, those lactones break down into acids. The pH of brewed coffee can drop 15 percent in an hour or so, throwing off the acidity-bitterness-body balance so crucial to a good cup of coffee.

Water quality at L.A. County beaches improves

The water at 82% of Los Angeles County's beaches earned solid A or B grades in Heal the Bay's annual Beach Report Card, but many of the state's most polluted shores continue to be in the county.

Last year, the Santa Monica-based environmental group reported a dip in water quality that bucked years of steady improvement. That was attributed in part to heavy rainfall.

Heal the Bay credited the gains this year to a drier winter and the construction of more facilities to capture, treat and divert tainted storm water before it reaches the ocean.

The city of Los Angeles has completed eight such projects from Pacific Palisades to Playa del Rey, the group said. In most cases, nearby beaches have seen improved water quality.

"They received really stellar grades," said Amanda Griesbach, a Heal the Bay water quality scientist.

Still, L.A. County remains far below the state average: 92% of California's beaches earned A or B grades, up 2 percentage points from the prior year.

The report evaluated hundreds of beaches in California, Oregon and Washington from April 2011 to March 2012, giving them grades of A to F based on tests for bacterial pollution levels, which indicate how likely the water is to harbor pathogens that can make swimmers sick.

Long Beach continued its dramatic turnaround, the report shows.

The water at 93% of the city's beaches, long polluted by the runoff that washes down the Los Angeles and San Gabriel rivers, earned A and B grades during the summer of 2011, up from 27% the previous year.

The improvements could be traced to a series of projects the city has undertaken to repair its sewer system and divert and disinfect storm runoff. Officials began noting drastically better test results last year.

Many of the region's chronically polluted beaches stayed that way. Seven of the state's top 10 most polluted beaches are in L.A. County.

Topping the list is Catalina Island's Avalon Harbor Beach, where a leaking sewer system has made it one of the dirtiest in California for nearly a decade.

Other "beach bummers" included four in Malibu ?- Puerco Beach, Surfrider Beach, Solstice Canyon Beach and Escondido Beach ? and two in Orange County: Doheny State Beach in Dana Point and San Clemente's Poche Beach.

Some of the cleanest beaches in the state include Los Angeles' Dockweiler, Abalone Cove in Rancho Palos Verdes and St. Malo Beach in Oceanside. Their A+ grades earned them a spot on Heal the Bay's "honor roll."

(AP) ? The private company SpaceX made history Friday with the docking of its Dragon capsule to the International Space Station, the most impressive feat yet in turning routine spaceflight over to the commercial sector.

It marked the first time a business enterprise delivered a supply ship to the space station.

"There's so much that could have gone wrong and it went right," said an elated Elon Musk, the young, driven billionaire behind SpaceX.

"This really is, I think, going to be recognized as a significantly historical step forward in space travel ? and hopefully the first of many to come."

SpaceX still has to get its Dragon back next week with a load of science gear; the retro bell-shaped capsule is designed to splash down into the ocean, in the style of the Mercury, Gemini and Apollo programs. But Friday was the crucial step, Musk noted, and NASA agreed the next SpaceX mission could come as early as September.

After a three-day flight from Cape Canaveral, the Dragon closed in on the space station as two control centers ? NASA in Houston and SpaceX in Hawthorne, Calif. ? worked in tandem. A problem with the capsule laser-tracking system prompted SpaceX controllers to order a temporary retreat, but the problem quickly was resolved.

NASA astronaut Donald Pettit used the space station's 58-foot robot arm to snare the gleaming white Dragon as the two craft soared 250 miles above Australia, a day after a practice fly-by.

"Looks like we've got us a dragon by the tail," Pettit announced once he locked onto Dragon's docking mechanism.

NASA's dressed-up controllers applauded. In contrast, their SpaceX counterparts ? including Musk ? lifted their arms in triumph and jumped out of their seats to exchange high fives.

The company's youthful-looking employees ? the average age is 30 ? were still in a frenzy when Musk took part in a televised news conference a couple hours later. They screamed with excitement as if it were a pep rally and chanted, "E-lon, E-lon, E-lon," as the 40-year-old Musk, wearing a black athletic jacket with the SpaceX logo, described the day's events.

Alcohol was banned from the premises during the crucial flight operation, Musk noted, "but now that things are good, I think we'll probably have a bit of champagne and have some fun." The crowd roared in approval.

Although cargo hauls have become routine, Friday's linkup was significant in that an individual company pulled it off. That chore was previously reserved for a small, elite group of government agencies.

Not only that, the reusable SpaceX Dragon is designed to safely return items, a huge benefit that disappeared with NASA's space shuttles. It is the first U.S. craft to visit the station since the final shuttle flight last summer.

"I think you know it, but you made history today," NASA Administrator Charles Bolden told the space station astronauts and everyone else involved in Friday's docking. "It was an effort that will revolutionize the way we carry out space exploration."

NASA provided seed money for SpaceX ? $381 million going into Tuesday's launch, a small portion of the more than $1 billion that the company has invested in the effort.

Two hours after the capture, the crew attached the Dragon to the space station as the congratulations poured in.

"Everyone who is working to push forward the space frontier recognizes that such a mission is a massive challenge, and I join the world in lauding this important accomplishment," said Richard Branson of Virgin Galactic, a space tourism company that is holding a seat for Musk aboard its SpaceShipTwo.

"Nearly 43 years after we first walked on the moon, we have taken another step in demonstrating continued American leadership in space," said Apollo 11's Buzz Aldrin, the second man to step onto the moon.

The capsule? 19 feet tall and 12 feet across ? is carrying 1,000 pounds of supplies on this unprecedented test flight. The crew starts unpacking Saturday and will have just under a week to unload the food, clothes and other contents.

After this test flight, SpaceX ? officially known as Space Exploration Technologies Corp. ? has a contract to make a dozen delivery runs. It is one of several companies vying for NASA's cargo business and a chance to launch Americans from U.S. soil.

Rival Orbital Sciences Corp. is shooting for its own supply run by year's end.

President Barack Obama is pushing commercial ventures in orbit so NASA can concentrate on grander destinations like asteroids and Mars. Obama's chief scientific adviser, John Holdren, called Friday's linkup "an achievement of historic scientific and technological significance."

"It's essential we maintain such competition and fully support this burgeoning and capable industry to get U.S. astronauts back on American launch vehicles as soon as possible," Holdren said in a statement.

Without the shuttle, NASA astronauts must go through Russia, an expensive and embarrassing situation for the U.S. after a half-century of orbital self-sufficiency. Once companies master supply runs, they hope to tackle astronaut ferry runs.

Musk, who founded SpaceX a decade ago and helped create PayPal, said he can have astronauts riding his Dragon capsules to orbit in three or four years. He also runs the electric car company Tesla Motors.

The space station has been relying on Russian, Japanese and European cargo ships for supplies ever since the shuttles retired. None of those, however, can bring anything of value back; they're simply loaded with trash and burn up in the atmosphere.

The space station's six-man crew will release the Dragon on Thursday after filling it with science experiments and equipment. It will aim for the Pacific Ocean just off the California coast.

"At the beginning of the launch, I said there were a thousand things that had to go right," said Alan Lindenmoyer, manager of NASA's commercial crew and cargo program. "Well, there still are several hundred left. But I am very confident we'll get through it. ... Today this really is the beginning of a new era in commercial spaceflight"

With interest rates on certain student loans set to double on July 1, the Senate channeled its inner college student by pulling the legislative equivalent of picking up an Xbox controller or logging into Facebook.

That is, the senators procrastinated in the face of an impending deadline.

The Senate was looking to "express itself" on the student loan issue on Thursday, as minority leader Mitch McConnell (R) of Kentucky put it the day prior. What senators expressed was a willingness to put actual work on student loan rates aside until at least after next week's district work period, as senators rejected both the Democratic and Republican options for picking up the $6 billion tab for extending low interest rates another year.

Without a congressional fix, interest on some subsidized federal loans would double to 6.8 percent starting in July. That's an outcome that neither party ? and neither presidential nominee ? says is desirable. Yet the parties can't decide how to come up with the cash to pay for keeping the rate low.

By allowing votes on both doomed measures, Senate Democrats nudged the student loan debate incrementally forward: Republicans blocked a vote on the Democratic proposal that would generate $6 billion by closing a payroll-tax loophole for a certain subsection of corporations, earlier in the month.

?We already know how this story ends," Senator McConnell said earlier in the day. "So why are Democrats forcing us to vote on their failed proposal yet again? Because, as I?ve said, they?re more interested in drawing our opposition ? and of creating a bad guy ? than in actually solving the problem."

By voting on both proposals, however, Republicans will be on record as voting for a proposal to cap student loan interest rates (paid for by raiding a preventive health-care fund), as well as voting against one, netting out any nettlesome political effects.

The Republican bill fell 34 to 62, while the Democratic proposal landed at 51 to 43, short of the 60 votes needed for passage.

The student loan votes capped a long day (by Senate standards), as the senators voted on some dozen amendments to a bill reauthorizing the Food and Drug Administration's authority to collect user fees to fund its review of drugs and medical devices. The FDA bill passed nearly unanimously, 96 to 1.

Then, senators turned their attention to whacking both student loan measures before high-tailing it out of town for the Memorial Day holiday and a week in their home states.

When they return, the Senate will face a rare full month of work in Washington, with issues including a farm bill, flood insurance legislation, small business tax relief, cybersecurity, and pay fairness for women on the agenda.

And then there are those pesky student loans which, as David Hawkings of Capitol Hill news group CQ wrote, "already looks like the get-out-of-town vote on June 29."

76ers top Celtics to force Game 7 in East semis

(AP) ? Jrue Holiday scored 20 points, and Elton Brand had 13 points and 10 rebounds to lead the tough-and-determined Philadelphia 76ers past the Celtics, 82-75 on Wednesday night to send the Eastern Conference semifinals back to Boston for Game 7.

No team has won consecutive games in a series where neither team has played well enough to seize control.

Paul Pierce, Kevin Garnett, Ray Allen and Rajon Rondo could be playing their last game together Saturday night if they can't find a way to hang onto the ball and put away a Sixers team that won't quit.

Former 76ers All-Star Allen Iverson earned a roaring standing ovation when he presented the game ball. By the end, the fans were on their feet for Holiday, Brand and Andre Iguodala for keeping the eighth-seeded Sixers alive for at least one more game.

The Celtics posted ugly numbers across the board: Blame the loss on the 33 percent shooting, the 17 turnovers or the 3 for 14 3-point shooting. Either way, there's enough to go around.

Pierce had 24 points and 10 rebounds, and Garnett had 20 points and 11 boards.

The Sixers again failed to put up the sparkling numbers in the box score usually required for a deep postseason run. They missed 8 of 9 3-pointers, shot a woeful 17 of 28 from the free throw line and had 12 turnovers.

But when the Sixers really needed that game-changing basket, there was Evan Turner twisting and fighting through defenders down the lane. When the Sixers needed a stop, there was Brand, ripping a rebound away from Boston, even with painful neck and shoulder injuries that keep him awake at night.

The Sixers wrote "Huddle Up and Fight" on their locker room chalkboard.

They did just that and are now one win away from reaching the conference finals for the first time since 2001.

Iverson was the MVP of that run.

Maybe a little of that ol' A.I. magic rubbed off in Game 6.

Unlike Game 5, when the Sixers collapsed in the third quarter and blew a lead, they suddenly found a groove in front of 20,403 fans.

The Sixers started hitting free throws, kept turnovers to a minimum (two), and fed the ball to a starting lineup that had been largely outproduced by a fantastic bench.

Turner was fouled on a go-ahead layup but missed from the line. That made the Sixers 5 of 13 while the Celtics were 14 for 14.

Iguodala split two defenders and threw down a ferocious dunk over Pierce to draw the foul. He made his first free throw after missing his first four and the Sixers led by five.

Pierce led the parade to the line for the Boston. He made his first 11 attempts for a Celtics team that was 17 for 17 through three quarters. The Celtics made only 19 field goals through three.

The Sixers also couldn't find their way from the 3-point line and missed their first six attempts until Iguodala nailed one for a 58-52 lead.

Garnett caught some heat after calling Philly fans "fair weather" after Game 5 in Boston.

Well, the forecast called for thunderous cheers after Iguodala buried his 3.

That helped the Sixers take a 60-56 lead into the fourth and put them 12 minutes away from Game 7.

This time, the Sixers weren't blowing a lead.

Turner, who never met a clutch attempt he didn't like, went right-to-left on a drive down the lane for a nine-point lead. The 6-foot-4 Holiday brushed off the 4-inch difference and went high over Garnett for a one-handed bucket and an 11-point lead.

While the Sixers swapped shot makers on almost every possession, the Celtics never found that third and fourth option behind Pierce and Garnett.

Rajon Rondo had tortured the Sixers over the first five games, but was limited to nine points (4 for 14 shooting) and six assists.

Iguodala and Turner scored 12 points. Lou Williams had 11.

Coach Doug Collins had the Sixers watch a highlight video from Game 7 of the 1982 Eastern Conference finals on Tuesday. The Sixers blew a 3-1 lead in that series and were forced to win Game 7 at Boston to reach the finals ? which they did.

Thirty years later, the Sixers get to try again.

Notes: Iverson cupped his hand to his ear and received the loudest ovation of the night. He watched the game from a suite and his eyes watered up when he was shown later in the game on the big screen as the crowd, thousands wearing a No. 3 jersey, went wild and chanted, "MVP!" ... Celtics assistant coach Tyronn Lue was famously stepped over by Iverson in the 2001 NBA finals. ... Celtics G Avery Bradley (shoulder) sat out. Coach Doc Rivers said Bradley and Ray Allen are both considered day to day. ... Collins was stunned Iguodala was left off the NBA's all-defensive squad. Collins said Iguodala should have been "no worse than a second-team defender." ... Mickael Pietrus hit the only 3 of the half for either team at the buzzer to send the Celtics into the break ahead 36-33.
